We will also cover the salted and crumbled cod with water for 8 hours, changing the water twice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To boil the watercress, heat water in a pot with garlic, a bay leaf, leek and carrot, previously peeled, cleaned and cut into three pieces. When the water boils, add the watercress and cook for 1 hour and a half.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">While the cirons are cooking:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cut into very small cubes (a <em>brunoisse<\/em>) the onion.<\/li>\n\n\n\n<li>Peel and dice the tomatoes.<\/li>\n\n\n\n<li>Peel two garlics and roll them.<\/li>\n\n\n\n<li>We wash the spinach, spin it and cut it into thick pieces.<\/li>\n\n\n\n<li>Remove the excess water from the cod.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a frying pan or a pan with oil, add the rolled garlic. When they begin to brown, add the onion, tomato, salt and pepper, and simmer everything over low heat. When the stir-fry is well done, add a teaspoon of black pepper and the cod. We stir it and let it cook for 3 minutes with a little broth from the watercress. Add the spinach, a little salt and pepper and stir everything.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finally, add the watercress to the stir-fry, with part of the broth, just so that they remain moist. Mix everything and serve.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Extra tip<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">This dish gains flavor if left to rest for a few hours before serving.
