Recipe for coca de recapte with red onion and figs from La Senyora

Ingredients

  • Brown Xeixa flour
  • Figs of the Lady
  • Red onion
  • Olive oil
  • Beer
  • Salt
  • Jam (optional)
  • Sobrassada (optional)
  • Tomato sauce (optional)

Recipe preparation

Mix the oil, beer and pinch of salt in a bowl. Gradually add the flour and knead until the dough has a texture that does not stick to the walls but is not excessively strong. The quantities can vary depending on the number of cakes we want to make. It is not necessary to let it rest.

Roll out the dough and prick it with a fork. You can make the cakes in different sizes, depending on your taste and you can paint them with a little tomato sauce (optional). Cover the cakes with the onion, which you have previously cut into not very small pieces and cooked in a pan with a little oil and salt. Cut the figs into slices and add them to the cakes. On top of the figs you can put a piece of sobrasada or a piece of mayonnaise cheese.


Bake at 180º for about 12 minutes or until the dough is cooked. We can also bake the cakes “in white” first, just the dough without the ingredients. This way we will save a little time and we will ensure that the dough is well cooked.
