Ingredients
- 100 gr. of spelt flour
- 100 gr. wheat flour Florence (optional, other varieties can be used)
- 100 gr. almond flour
- 300ml almond milk
- 130ml of oil
- 50 gr. of honey
- 50 gr. unrefined sugar
- Cherries of local varieties, quantity to taste.
- Sliced almonds
- 8g of bicarbonate
- Salt
- The skin of half an orange
- Juice of half an orange
Recipe preparation
First, remove the pits from the cherries and leave them in a prepared bowl. Then, mix the almond milk, sugar, and oil in a container and stir.
Then the honey and right after the florentine and spelt flour, the almond flour, the baking soda, a pinch of salt and the grated orange peel.
At each step we have to mix so that everything is very homogeneous. Then we add the pitted cherries and mix. We put the dough in a mold and cover it with flaked almonds.
We bake it at 170ºC for about 45 minutes. Once we have taken it out of the oven we can pour the juice of half an orange on top.
